Job Description:

As a Junior Sous Chef – Pierre, you’ll report directly to the Outlet Chef,  you will assist in the management of Kitchen Operations including menu planning and costing, organizing special events, developing new dishes, maintaining food quality standards and comprehensive product knowledge.

Job Responsibilities:

  • Coaches, counsels and disciplines staff, providing constructive feedback to enhance performance
  • Assist with organizing special events and special food promotions
  • Develop new dishes and products
  • Ensure that outstanding culinary technical skills are maintained
  • Follows the FBM daily orders
  • Assists in co-ordinating the preparation of the departmental annual budget
  • Assists in developing of new dishes and products
  • Assists in maintaining a comprehensive, current and guest focused set of departmental standards and procedures and oversees their implementation
  • Ensures training needs analysis of Kitchen staff is carried out and training programmes are designed and implemented to meet needs
  • Assists in planning for future staffing needs
  • Cleanliness of the kitchen and equipment
  • Maintain personal hygiene as well as colleagues hygiene practices
  • Maintain a hygienic kitchen
  • Maintain comprehensive product knowledge including ingredients, equipment, suppliers, markets, and current trends and make recommendations for appropriate adjustments to kitchen operations accordingly
  • Prepares and administers detailed induction program for new staff
  • Develop and write standard recipes
  • Assists with organizing special events and special food promotions
  • Regularly communicates with staff and maintains good relations
  • Provides input for probation and formal performance appraisal discussions in line with company guidelines
  • Assists in recruiting in line with company guidelines
  • Controls and monitors departmental costs on an ongoing basis to ensure performance against budget
  • Participate in the planning and costing of menus
  • Approves leave after considering hotel occupancies

Job Requirements:

  • Must have strong communication skills
  • Ability to lead a large team
  • Committed to serving food of the highest quality
  • Has a passion for cooking and creating new menu

Qualification & Experience:

  • Must have similar experience working in either a luxury restaurant or a 5* hotel environment
  • Experience in French cuisine is ideal.
