Job Description:

Maintains operation and planning for all sections in the shift in terms of manpower and work flow. Liable for future planning of the section in terms of manpower and equipment, follows up day to day operations of food, assigned and monitor all approved tasks. Responsible to look after one outlet within the production department. Supervises that the section is equally manned in all shifts to ensure meals are prepared as per production plan and within HACCP guidelines

Job Responsibilities:

  • Develop full knowledge of JD Edwards Enterprise one System, Bin conveyor and GN (Gastronomic) tray management system and centralized cooking control and monitoring system to give a proper training to the staff.
  • To conduct weekly Yield test to control food cost.
  • Support the Line Manager to forecast the man minutes and productivity of the sections for upcoming cycles.
  • Check the quality of raw materials being received in the kitchen and highlight any quality issued to purchasing for corrective action.
  • Maintain and monitor high standards of cooking and presentation for all the Amiri and VVIP flight preparation (Seasoning, portion size, appearance).
  • To give proper handover of equipment’s from shift to shift.
  • Check all the Amiri and VVIP preparations in the sections to meet the required standard in (quantity, quality and taste)
  • To manage the production of all meals within the outlet in all shifts.
  • Monitor that all meals are being delivered on time to operations department as per production hand over plan.
  • Assist the Line Manager for future planning and support during menu development and presentations to deliver good quality meals.
  • Check standard recipes are followed for all dishes prepared during the shift, and train the staffs to handle and use the recipes properly. Check the meals prepared by the section and ensures that the standard recipes are being followed by the team hence delivering meals of highest standards to the airlines.
  • Check on every working place of cooks and utilities, including storing areas, fridges and dust bins in all production areas for cleanliness and food cost.
  • Check the Amiri orders and requests pass to purchasing, if any substitution contacts Amiri operation team or Amiri crew for necessary suggestions and fill the relevant documents.
  • Ensures that meals are prepared as per HACCP (Hazard Analysis Critical Control Point) standards and airline specifications.
  • Monitor the meals produced by the staff within the section, in all shifts are prepared as required load quantity and any balances are managed effectively to minimize wastage in the section.

Job Requirements:

  • Good Computer skills in MS Office.
  • Basic Food hygiene & HACCP (Hazard Analysis Critical Control Point) skills.
  • Must be keenly aware of new trends and directions in the fine dining service industry.
  • Good Knowledge about food and beverages.
  • Fluent in reading, writing, speaking English.

Qualification & Experience:

  • Ability to effectively supervise and train a large diverse work staff and experience in managing in a high-pressure environment.
    Planning and supervisory skills.
  • In order to be successful in this role, we are looking for the candidates with Bachelor’s Degree or Equivalent with Minimum 3 years of job-related experience.
  • High School Qualification / Vocational Qualification /Diploma or Equivalent (Type of Diploma Based on Role) with Minimum 4 years of job-related experience
  • Worked as a Junior Sous Chef for minimum of 1 year
